Sauerkraut soup with hunter’s sausages, celery, and carrots!

Ingredients (for 4 servings):

For the Soup:

  • 500 g Dimdiņi sauerkraut with carrots
  • 3 carrots
  • 2 red onions
  • 3-4 celery stalks
  • 80 g pearl barley (soaked in water for 2 hours)
  • 300-400 g hunter's sausages
  • 2-3 L water
  • oil for frying
  • a pinch of salt, pepper
For Serving:
  • sour cream

Preparation:

  1. Soak the pearl barley in water for 2 hours before cooking.
  2. Peel and chop the carrots and onions into small pieces. Chop the celery stalks into small pieces.
  3. Pour oil into a pot and sauté the onions and carrots. Sauté for 8-10 minutes.
  4. Add water and let it boil for 10-15 minutes.
  5. Slice the hunter’s sausages and lightly fry them in a pan. Drain the water from the pearl barley.
  6. Add the sauerkraut, pearl barley, hunter’s sausages, and celery pieces to the soup. Boil for 20-25 minutes.
  7. If necessary, add salt and pepper.
  8. Serve the soup with sour cream.
