What you'll need (for 4 people)
- 800 g pumpkin, cut into small pieces
- 300 g red sauerkraut
- 300-400 g rice
- 200 ml coconut milk
- a handful of mixed sprouts
- oil for frying
- salt to taste
- chili flakes to taste
- ½ teaspoon curry powder (optional)
Preparation:
- Place the pumpkin in boiling water and cook for 5-7 minutes until soft but still slightly firm in the middle.
- In a separate pot, boil the rice in water until tender.
- Heat a pan with oil and sauté the pumpkin pieces. Add the red sauerkraut, coconut milk, rice, and spices. Simmer for 10-14 minutes.
Serve topped with sprouts.
