Grilled Dimdiņi baking beets with herb cottage cheese, radish slices, and fresh greens!

Ingredients (serves 4)
  • 1 package Dimdiņi Baking Beets
  • 100 g mixed salad leaves
  • 1 bunch of radishes
  • 200 g cottage cheese
  • a handful of mixed herbs (parsley, dill, chives...)
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • a pinch of salt

Preparation:

  1. Light the grill (takes approximately 15-20 minutes).
  2. Mix the beets with olive oil, balsamic vinegar, and salt.
  3. Finely chop the herbs and mix with the cottage cheese. Add a little salt.
  4. Slice the radishes. Place the beets on the grill and cook for 15-20 minutes.
  5. Arrange the salad: salad leaves, beets, cottage cheese, and radish slices.
