Fresh Salad with Fried Cheese and Onions!

Ingredients (for 4 servings)
For the Salad:
- 100 g mixed greens
- 80 g Dimdiņi pickled onions
- 150 g cherry tomatoes
- 80 g sun-dried tomatoes
- 30 g butter for frying
- 200 g frying cheese (caraway cheese or other frying cheese can be used)
- 80 ml olive oil
- a pinch of salt, pepper
Preparation:
- Cut the cheese into small pieces. Heat a pan with butter and fry the cheese for 5-7 minutes on both sides (the cheese can also be grilled).
- Cut the salad leaves, cherry tomatoes, and sun-dried tomatoes into small pieces.
- For the dressing, mix olive oil with salt and pepper.
- Arrange the salad in a bowl: salad leaves, both types of tomatoes, onions, and cheese. Drizzle with dressing and serve.
