Red cabbage with roasted pumpkin chunks and rice!

Ingredients

What you'll need (for 4 people)
  • 800 g pumpkin, cut into small pieces
  • 300 g red sauerkraut
  • 300-400 g rice
  • 200 ml coconut milk
  • a handful of mixed sprouts
  • oil for frying
  • salt to taste
  • chili flakes to taste
  • ½ teaspoon curry powder (optional)

Preparation:

  1. Place the pumpkin in boiling water and cook for 5-7 minutes until soft but still slightly firm in the middle.
  2. In a separate pot, boil the rice in water until tender.
  3. Heat a pan with oil and sauté the pumpkin pieces. Add the red sauerkraut, coconut milk, rice, and spices. Simmer for 10-14 minutes.

Serve topped with sprouts.
