Tortilla with roasted chickpeas, tofu, and guacamole!

Ingredients

Ingredients (for 4 servings):
  • 250g Dimdiņi chickpeas
  • 4 tortillas
  • 6-8 cherry tomatoes
  • 200g tofu (other types can also be used)
  • A handful of chopped parsley
  • A pinch of brown sugar
  • Salt, pepper
  • Oil
For the guacamole:
  • 3 ripe avocados
  • 20ml lime juice
  • A pinch of salt, pepper

Preparation:

  1. Heat a pan with oil and add the chickpeas to fry. Fry for 10-12 minutes, adding a pinch of salt and half of the chopped parsley.
  2. Cut the tofu into small pieces and fry in a pan for 12-16 minutes, adding the other half of the parsley and a pinch of salt.
  3. Halve the cherry tomatoes and fry them in a pan with oil for 6-8 minutes, adding a pinch of salt and brown sugar.
  4. To prepare the guacamole: peel the avocados, remove the pit, mash with a fork, and mix with salt, pepper, and lime juice.
  5. Spread guacamole on a tortilla, then add chickpeas, fried tomatoes, and tofu. Roll it up, wrap it in foil or a paper bag, and head out to enjoy nature.
