Red cabbage salad with fried prawns!

Ingredients

Ingredients (for 4 servings): For the Salad:
  • 300 g Dimdiņi red cabbage picnic salad
  • 100 g cashews (for sprinkling)
For the prawns:
  • 300 g defrosted, peeled prawns
  • 2 garlic cloves
  • a few sprigs of thyme
  • 10 g butter (half of 20 g)
  • Pinch of salt
For the caramelized apricots:
  • 4-6 apricots
  • 10 g butter (the other half of 20 g)
  • a pinch of brown sugar

Preparation:

  1. Heat a pan with half the butter. Add the chopped garlic cloves, thyme sprigs, and salt to fry. Add the prawns and fry for 8-10 minutes.
  2. In another pan, melt the other half of the butter with the brown sugar. Cut the apricots in half and fry them for 10-12 minutes.
  3. Arrange the salad, prawns, and apricots on a plate. Sprinkle with cashews.
