Tortilla with roasted chickpeas, tofu, and guacamole!

Ingredients
Ingredients (for 4 servings):
- 250g Dimdiņi chickpeas
- 4 tortillas
- 6-8 cherry tomatoes
- 200g tofu (other types can also be used)
- A handful of chopped parsley
- A pinch of brown sugar
- Salt, pepper
- Oil
- 3 ripe avocados
- 20ml lime juice
- A pinch of salt, pepper
Preparation:
- Heat a pan with oil and add the chickpeas to fry. Fry for 10-12 minutes, adding a pinch of salt and half of the chopped parsley.
- Cut the tofu into small pieces and fry in a pan for 12-16 minutes, adding the other half of the parsley and a pinch of salt.
- Halve the cherry tomatoes and fry them in a pan with oil for 6-8 minutes, adding a pinch of salt and brown sugar.
- To prepare the guacamole: peel the avocados, remove the pit, mash with a fork, and mix with salt, pepper, and lime juice.
- Spread guacamole on a tortilla, then add chickpeas, fried tomatoes, and tofu. Roll it up, wrap it in foil or a paper bag, and head out to enjoy nature.
