Beetroot Salad with Goat Cheese and Pear Slices!

Ingredients

Ingredients (for 4 servings) For the Salad:
  • 600 g Dimdiņi steamed beetroot
  • 100 g spinach and arugula leaves
  • 150 g soft goat cheese
  • 1-2 pears
  • 40 g walnuts
  • Oil for cooking

For the Dressing:

  • 50 ml olive oil
  • 15 ml lemon juice
  • ½ teaspoon ground cumin
  • Pinch of salt

Preparation:

  1. Heat a pan with oil and add the beetroot to fry. Cook for 8-10 minutes over medium heat.
  2. Wash and dry the spinach and arugula leaves. Slice the pears thinly and lightly crush the walnuts.
  3. Mix all dressing ingredients together.
  4. Arrange the salad leaves in a bowl or on a plate, then layer with beetroot, pear slices, and goat cheese. Drizzle with dressing, sprinkle with walnuts, and serve.
