Beetroot Salad with Goat Cheese and Pear Slices!

Ingredients (for 4 servings)
For the Salad:
- 600 g Dimdiņi steamed beetroot
- 100 g spinach and arugula leaves
- 150 g soft goat cheese
- 1-2 pears
- 40 g walnuts
- Oil for cooking
For the Dressing:
- 50 ml olive oil
- 15 ml lemon juice
- ½ teaspoon ground cumin
- Pinch of salt
Preparation:
- Heat a pan with oil and add the beetroot to fry. Cook for 8-10 minutes over medium heat.
- Wash and dry the spinach and arugula leaves. Slice the pears thinly and lightly crush the walnuts.
- Mix all dressing ingredients together.
- Arrange the salad leaves in a bowl or on a plate, then layer with beetroot, pear slices, and goat cheese. Drizzle with dressing, sprinkle with walnuts, and serve.
