Peppers stuffed with beans and corn!

Ingredients

You will need (for 4 people):
  • 4-6 red bell peppers
  • 200g Dimdiņi red beans
  • 150g corn
  • 150g cooked rice
  • 100g grated cheese
  • a pinch of salt and pepper
  • 40g cashews

Preparation:

  1. Preheat the oven to 180°C.
  2. Wash the peppers, cut them in half, and remove the cores.
  3. In a bowl, mix the beans, corn, rice, salt, and pepper. Stuff the peppers and bake for 15-20 minutes.
  4. Serve topped with cheese and cashews.
