Peppers stuffed with beans and corn!

Ingredients
You will need (for 4 people):
- 4-6 red bell peppers
- 200g Dimdiņi red beans
- 150g corn
- 150g cooked rice
- 100g grated cheese
- a pinch of salt and pepper
- 40g cashews
Preparation:
- Preheat the oven to 180°C.
- Wash the peppers, cut them in half, and remove the cores.
- In a bowl, mix the beans, corn, rice, salt, and pepper. Stuff the peppers and bake for 15-20 minutes.
- Serve topped with cheese and cashews.
