Ingredients (for 4 servings): For the Salad:
  • 3 boiled beets
  • 3 boiled potatoes
  • 3 boiled carrots
  • 2 small onions
  • 200 g Dimdiņi sauerkraut
For the Dressing:
  • 50 ml olive oil
  • 1 teaspoon lemon juice
  • Pinch of salt, pepper
  • 2 tablespoons chopped parsley

Preparation:

  1. Peel and cut the beets, potatoes, carrots, and onions into small pieces.
  2. In a small bowl, mix the olive oil, salt, pepper, and lemon juice.
  3. Place the chopped vegetables and sauerkraut in a large bowl. Pour the dressing over them and mix.
  4. Serve, sprinkled with chopped parsley.
