Pita bread with coleslaw salad and roasted zucchini!

Ingredients

  • 4 pita breads
  • 250 g Dimdiņi coleslaw salad
  • 2 small zucchini
  • 2 avocados
  • A handful of mixed greens, optional
  • A handful of hazelnuts
  • A pinch of salt, pepper
  • Oil for frying
  • Cherry tomatoes, if desired

Preparation:

  1. Slice the zucchini into rounds and fry them in a heated pan with oil, adding salt and pepper. Fry for 8-10 minutes.
  2. Lightly warm the pita breads in a pan or oven.
  3. Slice the avocado into wedges, halve the cherry tomatoes, and chop the nuts and greens.
  4. Place coleslaw salad on each pita bread, then top with zucchini, avocado, and cherry tomatoes. Sprinkle with hazelnuts and greens.
